Shallow-fried Salmon Fishcakes With Molten Cheddar Centres

Ingredients:

Makes about 8-10 small patties, total time to make, preparation + cooking = approximately 30 minutes.

You will need:

  1. Two salmon fillets, raw
  2. Two large potatoes
  3. Handful of peas (fresh or frozen)
  4. Cooking oil (vegetable/sunflower/light olive)
  5. Salt/pepper/seasonings
  6. Herbs
  7. Cheddar cheese block.

Method:

This is using minimal pans and utensils. If you are under 18, have an adult supervise the use of knives/flames.

  1. You have to start with Bismillah, In Allah’s name, there is blessings in doing so!
  2. Descale and de-skin the salmon fillet. Wash it and wrap it in tin-foil.
  3. Peel and wash the potatoes, cut them into cubes.
  4. Add water to a pan and a steaming colander on top. Add the potatoes, then the foiled salmon. Cover the pan.
  5. Steam for 10 minutes. Add washed peas to the colander and steam for a further 5 minutes.
  6. If you were too lazy to peel potatoes or didn’t have any, you can just use instant mash potato powder and make one bowl of thick (not creamy) mashed potatoes. It will do the job, but won’t taste as good as real potatoes. If you couldn’t get hold of fresh salmon, use the tinned variety. For a vegetarian option, add soft tofu instead.
  7. Cut the cheddar cheese into small dice-sized cubes.
  8. Move the cooked salmon to a bowl and mash.
  9. Move the cooked potatoes to a bowl and mash.
  10. Smash the salmon and potatoes together. Then add the peas, herbs and the seasonings.
  11. Form into little balls.
  12. Press the centre of the balls and place a cheese cube inside it. For a vegan option, omit the cheese or use nutritional yeast/lactose-free cheese.
  13. Form the ball into a patty, with the cheese cube engulfed by the salmon mix.
  14. Get a frying pan and add some oil. We will shallow fry to be healthier.
  15. Place the patties in, turning once, until golden on each side.
  16. Put the cooked salmon fishcakes on a paper towel.
  17. Say Bismillah and taste.
  18. Share with your family and friends!
